Cocoa No-Bake Cookies
This healthy recipe comes from NDSU Extension Service.

Ingredients

  • 2 c. sugar
  • 3 Tbsp. cocoa powder, unsweetened
  • 1/2 tsp. salt
  • 1/2 c. butter or margarine spread
  • 1 c. peanut butter
  • 1/2 c. water
  • 4 c. rolled oats (old-fashioned)
  • 1 c. nonfat dry milk
  • 1 c. raisins (optional)
  • 1 tsp. vanilla

Directions

In a large saucepan, bring sugar, cocoa powder, salt, margarine, peanut butter and water to a rolling boil for one minute, stirring as needed. Remove from heat. Add oats, dry milk, raisins, and vanilla to the boiled mixture. Mix well. Drop by tablespoonfuls onto waxed paper and let stand until cool, about 15 to 20 minutes.

Makes 36 servings.

Per Serving: about 160 calories, 7 grams (g) of fat, 23 g carbohydrate, 4 g protein, 2 g fiber and 100 mg sodium
