This healthy recipe comes from NDSU Extension Service.


  • 1 pkg. devil’s food cake mix

  • 1 (15-oz) can pure pumpkin

  • 1 ½ tsp. sugar (optional)


Mix dry cake mix and pumpkin together, then place in muffin tins. Sprinkle the tops of each muffin with a little sugar. Bake at 400 F for 20 minutes.

Makes 18 servings.

Per serving: 130 calories, 4.5 grams (g) fat, 2 g protein, 23 g carbohydrate and 240 mg sodium.
