Cheddar and Ham Muffins

This healthy recipe comes from NDSU Extension Service.


•    1/2 c. reduced fat shredded sharp Cheddar cheese
•    1 3/4 c. all-purpose baking mix
•    1 c. low-fat milk
•    1/2 tsp. ground black pepper
•    1/2 c. low-fat ham, chopped fine



Mix first three ingredients together; add pepper and ham. Mix well and spoon into lined muffin pans until half full. Bake in preheated 400 degree oven for 12 to 15 minutes or until golden brown.

Makes 9 muffins.

Per Serving: about 120 calories, 2.5 grams (g) of fat, 18 g carbohydrate, and 20% of daily recommended value for calcium.
