Bruschetta Pasta Salad
This healthy recipe comes from NDSU Extension Service.


3 c. cooked pasta

5 tomatoes, chopped

2 green onions, chopped

1 Tbsp. red onion, finely chopped

1 to 2 cloves garlic, minced

1 bunch basil, chopped (about ¾ cup)

1 Tbsp. olive oil

2 to 4 tsp. balsamic vinegar (to taste)

1/3 c. shredded Parmesan cheese

Salt and fresh ground pepper to taste


Combine tomatoes, onions, garlic, basil, olive oil, balsamic vinegar and Parmesan cheese in a bowl. Let mixture rest for at least 15 minutes. Toss the tomato mixture with the cooked pasta. Season with salt and ground pepper.

Makes 6 servings.

Per Serving: about 160 calories, 4.5 grams (g) of fat, 23 g carbohydrate, 6 g protein and 95 mg sodium
