Breakfast (or Anytime) Burrito

  • 2 eggs
  • 2 Tbsp. nonfat or low-fat milk
  • 2 6-inch flour tortillas, warmed*
  • 2 Tbsp. shredded low-fat cheddar cheese
  • 1/4 c. salsa (purchased or homemade)


Beat eggs and milk in a small bowl. Lightly coat a skillet with nonstick cooking spray. Pour egg mixture into pan and cook on medium to low heat until eggs become firm. Spoon half of egg mixture down the center of each tortilla. Top each with half of the cheese. Roll tortilla and serve with salsa.

* Try whole-wheat tortillas to add fiber.

Makes 2 servings.

Per Serving: about 210 calories, 9 grams (g) of fat, 20 g carbohydrate, 12 g protein, 2 g fiber and 520 mg sodium
