Baked Rice Pudding

This healthy recipe comes from NDSU Extension Service.


  • 1 c. white rice (long grain)
  • 2 1/2 c. boiling water
  • 2 Tbsp. butter
  • 3/4 tsp. salt
  • 1/2 c. raisins (optional)
  • 1/2 to 2/3 c. sugar (to the sweetness you prefer)
  • 1 tsp. cinnamon
  • 1/2 tsp. low-fat or fat-free milk (or enough to nearly cover rice)


Preheat the oven to 350 degrees. Put rice in a 1 1/2-quart casserole dish. Add butter, salt and boiling water. Bake 35 minutes. Fluff with a fork and slowly add milk to almost cover rice. Add sugar and cinnamon. Stir. Return to oven and bake for 15 to 20 minutes longer.

Makes 6 servings.

Per Serving: about 220 calories, 4 grams (g) of fat, 42 g carbohydrate, and 330 mg sodium
