Baked Applesauce Oatmeal Squares
This healthy recipe comes from NDSU Extension Service.

Ingredients

  • 1 Tbsp. canola oil
  • 1/2 c. unsweetened applesauce
  • 1 1/2 c. fat-free ilk
  • 1/2 c. brown sugar
  • 2 tsp. vanilla extract
  • 2 eggs
  • 3 c. uncooked rolled oats
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1/2 c. raisin
  • 1/2 c. chopped pecans

Directions

  1. In a large bowl, mix oil, applesauce, milk, sugar, vanilla, and eggs.
  2. In a separate bowl, stir together dry ingredients and add to egg mixture
  3. Evenly spread mixture into a greased 9 x 13 -inch baking dish
  4. Bake uncovered at 375 F for 25 minutes
  5. Serve warm

Makes 12 servings.

Per Serving: about 210 calories, 7 grams (g) of fat, 5 g protein, 22 g carbohydrate, 3 g fiber and 220 mg sodium
