Avocado Tuna Salad
This healthy recipe comes from NDSU Extension Service.


1 (12.5-oz.) can tuna, drained

1 avocado, diced

½ c. celery, minced

½ c. onion, minced

1 c. seedless grapes, cut in half

2 Tbsp. olive oil

1 Tbsp. lemon Juice

2 tsp. lemon zest

¼ c. fresh cilantro, chopped (optional)


Place all ingredients in a mixing bowl.

Use a fork to mash the avocado and chunks of tuna while combining ingredients.

Serve on whole-wheat toast or favorite sandwich bread.

Makes four servings. Each ¼-c. serving has 240 calories, 15 g fat, 17 g protein, 14 g carbohydrate, 4 g fiber and 210 mg sodium.
