Triple Fruit Crisp

This healthy recipe comes from NDSU Extension Service.


•    1/4 c. and 3 Tbsp. all-purpose flour, divided
•    1/4 tsp. ground cinnamon
•    1/4 tsp. ground nutmeg
•    1 20-oz. can unsweetened pineapple chunks, drained
•    1 16-oz. can (or jar) sliced pears in light syrup, drained
•    1 16-oz can (or jar) sliced peaches in light syrup, drained
•    1/2 c. quick cooking oats, uncooked
•    1/4 c. brown sugar, firmly packed
•    1/2 tsp. baking powder
•    1/4 tsp. salt
•    2 Tbsp. margarine, melted
•    1 tsp. vanilla extract
•    Whipped topping (optional


Combine three tablespoons flour, nutmeg and cinnamon in a large bowl. Add pineapple chunks, pears and peaches and toss gently to coat. Spray 10 x 6 x 2 baking dish with cooking spray. Spoon fruit mixture into dish. Combine 1/4 cup flour, oats, brown sugar, baking powder and salt in a bowl. Add margarine and vanilla, stirring until dry ingredients are moistened. Spoon over fruit. Bake at 350 degrees for 30 minutes or until golden brown. Let stand 10 minutes before serving. If desired, top with whipped topping.

Makes 8 servings.

Per Serving: about 185 calories, 3.3 grams (g) of fat, 39 g of carbohydrate, and 4 g of fiber.
