Healthier Ice Cream Sandwiches
This healthy recipe comes from NDSU Extension Service.


1 banana, frozen

1 c. frozen strawberries

4 graham cracker sheets, broken into 8 squares

¼ c. mini dark chocolate chips

¼ c. pecan pieces (optional)


Thaw banana and strawberries for 10 minutes.

In a blender for food processor, blend fruit until smooth but still firm. Place in freezer for 10 to 20 minutes if the mixture is not firm.

Spread mixture onto for graham cracker pieces. Top with dark chocolate chips or pecan pieces.

Place another graham cracker piece on top to create a sandwich.

Serve immediately or wrap sandwiches individually in plastic wrap. Place wrapped sandwiches in a resealable freezer bag and freeze.

Makes four servings. Each serving (without pecans) has 160 calories, 5 g fat, 2 g protein, 27 g carbohydrate, 2 g fiber and 69 mg sodium
