This healthy recipe comes from NDSU Extension Service.


  • 2 1/4 lb. beef, cubed
  • 1 head cabbage
  • 2 to 3 carrots
  • 3 to 4 large tomatoes
  • 3 to 4 large potatoes
  • 2 onions
  • 2 or more cloves garlic, sliced
  • 2 green bell peppers
  • 1/2 Tbsp. cooking oil
  • 1/2 Tbsp. vinegar
  • Salt and pepper to taste


Dice all vegetables. Combine with the meat and seasonings in a large pot. Add enough water to completely cover the mixture and add the oil and vinegar. Cook, covered, for two to three hours on low heat until everything is well done. Serve with pita bread

Makes four servings.

Per serving: 290 calories, 15 grams (g) fat, 15 g protein, 24 g carbohydrate and 1060 milligrams (mg) sodium
