Sour Cream and Spring Onion Salad
This ethnic recipe comes from NDSU Extension Service.

Ingredients

  • 3 c. spring onions
  • 2 c. cold sour cream (reduced-fat)
  • 1/2 tsp. salt

Directions

Rinse and blot dry two bunches of spring onions with paper towels. Remove a little bit of both ends so you only have the green and white stalks. Using scissors, cut the onions into pieces about 1/4 inch wide. Place spring onions in a bowl; add salt. Spoon in sour cream and stir until the onions are covered with sour cream. Serve immediately or store in refrigerator until ready for use.

Makes four servings.
