This ethnic recipe comes from NDSU Extension Service.


  • 1 to 1½ c. sugar
  • ½ c. water
  • ¼ lb. pumpkin
  • ½ c. chopped walnuts


Boil the sugar and water until it forms a thick syrup. Wash the pumpkin, peel it, remove the seeds, cut into pieces and cook in the syrup until it is very thick and almost all absorbed. Arrange the pumpkin on a plate and decorate with walnuts and cinnamon.

Makes six servings. Per serving: 220 calories, 7 grams (g) fat, 3 g protein, 47 g carbohydrate and 5 mg sodium.
