White Bean Dip
This healthy recipe comes from NDSU Extension Service.

Ingredients

  • 1 (15-oz.) can cannellini beans
  • ¼ cup parsley
  • 4 Tbsp. olive oil
  • 2 Tbsp. minced garlic
  • ¼ tsp. cayenne pepper
  • 2 Tbsp. lemon juice
  • ¼ cup plain Greek yogurt

Directions

1. Place all ingredients in a food processor, processing until smooth.
2. Serve with a variety of raw vegetables such as celery, peppers, and carrots.

Makes 10 servings.

Per Serving: about 90 calories, 6 grams (g) of fat, 6 g carbohydrate, 3 g protein, 2 g fiber, and 135 mg sodium
