Pinto Bean Taco Soup
Pinto Bean Taco Soup
This healthy recipe comes from NDSU Extension Service.


  • 1 pound ground beef
  • 1 onion, chopped
  • 1 package taco seasoning
  • 1/2 c. green pepper, chopped
  • 1 16-ounce can corn, drained, rinsed
  • 1 16-ounce can pinto beans, drained, rinsed
  • 1 14-ounce can stewed tomatoes, undrained
  • 1 14-ounce can diced tomatoes, undrained
  • 1 4-ounce can diced green chilies
  • 1 1/2 c. water


Brown meat, onion and green pepper; drain excess fat. Stir in taco seasoning, corn, pinto beans, tomatoes and green chilies. Add water and simmer on low heat for 20 to 30 minutes. Serve with tortilla chips and other favorite taco toppings.

Makes 8 servings.

Per Serving: about 180 calories, 2.5 grams (g) of fat, 22 g carbohydrate, 15 g protein, 5 g fiber,  and 450 mg sodium
