This healthy recipe comes from NDSU Extension Service.


  • 1 (15-ounce) can pinto beans, drained and rinsed
  • ¾ c. (1½ sticks) butter, melted
  • 1 c. cocoa
  • 1 Tbsp. vanilla
  • 5 c. powdered sugar
  • 1 c. chopped walnuts (optional)


Drain and rinse the beans. Melt the butter in a microwave oven, then place in a food processor. Add the rinsed beans and blend until smooth. Add cocoa and vanilla, and process until mixed. Gradually add the confectioners (powdered) sugar and process. Add the nuts and process just until mixed. Spray a 9- by 13-inch pan or line with parchment paper. Add fudge mixture and refrigerate several hours. Cut into 1-inch squares.

Makes 48 servings.

Per Serving: about 100 calories, 4.5 grams (g) of fat, 15 g carbohydrate, 1 g protein, 1 g fiber and 0 mg sodium
