Mandarin Orange - Kidney Bean Salad

This healthy recipe comes from NDSU Extension Service.


  • 1 15.5-oz. can kidney beans, drained and rinsed
  • 1 11-oz. can mandarin oranges, drained
  • 2 stalks celery, sliced
  • 1/2 c. creamy low-fat salad dressing (especially good with poppy seed dressing)
  • 2 Tbsp. sugar


Combine ingredients in bowl and chill several hours.


Makes 6 servings.

Per serving: 133 calories, 1 gram (g) fat, 26 g carbohydrate and 3 g fiber.
