10 ½ c. canned garbanzo beans, drained and rinsed

4 ⅔ c. red onion, diced

4 ½ c. green bell pepper, diced

2 c. fresh cilantro leaves

1 c. olive oil

⅓ c. red wine vinegar

2 tsp. dried oregano

2 tsp. ground black pepper


Combine garbanzo beans, red onion, green bell pepper and cilantro; mix thoroughly. In blender, combine olive oil, red wine vinegar, oregano and black pepper for dressing until emulsified. Toss dressing with bean mixture until well coated. Serve chilled.

Makes 50 servings.

Per Serving: 90 calories, 5 gram (g) of fat, 2 g protein, 9 g carbohydrate, 2 g fiber and 120 mg sodium.
