Fire-roasted Black Bean Salsa
This healthy recipe comes from NDSU Extension.

Ingredients

1 (15 oz.) can low sodium black beans, drained and rinsed

8 oz. fire-roasted tomatoes, drained

½ medium white onion, chopped

½ green bell pepper, chopped

2 Tbsp. dried cilantro

2 Tbsp. lime juice

Directions

Add all ingredients to a bowl and stir to combine.

 

 

Makes eight (1/3 cup) servings. Each serving has 60 calories, 0 grams (g) fat, 4 g protein, 12 g carbohydrate, 5 g fiber and 150 milligrams sodium.
