Festive Bean Spread
This healthy recipe comes from NDSU Extension Service.


  • 1 (15-oz.) can refried beans
  • 1 cup salsa
  • ½ tsp. garlic powder
  • 1 tsp. ground cumin
  • 2 cups non-fat plain Greek yogurt
  • 1 ounce packet taco seasoning
  • 2 diced tomatoes
  • 1 cup reduced fat Monterey jack cheese
  • 2 cups reduced fat cheddar cheese
  • 1 bunch chopped green onions


1. Mix refried beans, salsa, garlic powder, and ground cumin in a large bowl.
2. Place mixture in a 9 x 13 baking pan, spreading it evenly about a ½ inch thick in the bottom of the pan. This mixture will be the first layer.
3. In a bowl, combine Greek yogurt and taco seasoning. Mix them together and spread as the second layer on top of the bean layer in the baking pan.
4. Evenly sprinkle cheeses, tomatoes, and then green onions over the top of the yogurt layer in the baking pan.

Makes 16 servings.

Per Serving: about 100 calories, 3 grams (g) of fat, 9 g carbohydrate, 10 g protein, 2 g fiber, and 580 mg sodium.
