Chickpea Flour Pancakes
This healthy recipe comes from NDSU Extension Service.

Ingredients

1 ¼ c. chickpea flour

1 c. water

1 egg

1 ¼ tsp. baking powder

1 ¼ tsp. baking soda

1 tsp. vanilla extract

A pinch of salt

3 Tbsp. olive oil

Directions

Mix together the flour, water and salt.  Crack in the egg and mix well.  Let batter rest for a few minutes at room temperature.  Lightly oil a frying pan with a little oil, heat until very hot and add a ladle of batter.  Cook until lightly golden.  Turn the pancake over with a spatula and cook for one minute.  Repeat with the remaining pancake batter, re-oiling the pan each time.

 

Makes 10 pancakes.

Each serving has 90 calories, 5 grams (g) of fat, 3 g of protein, 7 g of carbohydrate, 1 g of fiber, 270 milligrams (mg) of sodium, and  53 micrograms (mcg) of folate and 0.7 mg of iron.
