Black Bean Salsa
This healthy recipe comes from NDSU Extension Service.

Ingredients

  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 medium tomato, diced
  • 1/2 medium onion, finely chopped
  • 1/2 green bell pepper, chopped
  • 1 jalapeno pepper, minced
  • 1/2 cup fresh cilantro, chopped
  • 2 Tbsp. lime juice

Directions

Add all ingredients to a bowl and mix together. Serve with baked tortilla chips.

Makes 8 servings.

Per Serving: about 40 calories, 0 grams (g) of fat, 9 g carbohydrate, 2 g protein and 260 mg sodium
