Black Bean and Fruit Salsa

  • 1/2 c. mango,  peeled and cubed
  • 1 c. papaya, peeled and diced
  • 1/2 c. pineapple, diced
  • 1/2 c. black beans, canned, drained and rinsed
  • 1 Tbsp. cilantro, minced
  • 1 Tbsp. lime juice
  • 1 Tbsp. extra-virgin olive oil
  • 1 tsp. cumin
  • 1/4 tsp. black pepper
  • 1 clove garlic, minced


Combine all ingredients in a large bowl; toss gently to coat.

Makes 8 servings.

Per Serving: about 40 calories, 2 grams (g) of fat, 6 g carbohydrate, 0 g protein and 0 mg sodium.
