Black Bean Sandwich Spread
Beans are an excellent source of low-fat protein. This healthy recipe comes from NDSU Extension Service.

Ingredients

  • 1/2 c. canned black beans, drained and rinsed
  • 2 oz. light cream cheese, softened
  • 2 1/2 tsp. lemon juice
  • 1/8 tsp. cayenne pepper
  • 1/4 c. finely chopped red bell pepper (can substitute green pepper)

Directions

Blend all ingredients except for chopped pepper in a food processor or blender until smooth. Transfer to a serving bowl and stir in chopped red pepper. Refrigerate for one hour to blend flavors.

Serving ideas: Spread on a tortilla, roll up like a cinnamon roll and cut 1-inch sections to make “pinwheel sandwiches.” Or serve as a dip for crackers or vegetables.

 

Makes three servings.

Per serving: 90 calories, 7 grams (g) fat, 3 g protein, 8 g carbohydrate, 2 g fiber and 150 milligrams sodium.
