2 lb. 12 oz. canned garbanzo beans, drained

1 Tbsp. lemon juice

2 tsp. granulated garlic

¼ c. vegetable oil

1 tsp. low-sodium soy sauce

¼ tsp. ground black or white pepper

¼ c. dried parsley

½ c. water


Mash or blend all ingredients, either by hand or by using a food processor. Refrigerate until ready to serve. Portion with No. 30 scoop. Serve with whole wheat pita wedges.

Makes 50 servings.

Per serving (2 tablespoons): 55 calories, 2 grams (g) of fat, 9 g carbohydrate, 2 g protein, 2 g fiber and 115 mg sodium.
